If I’m craving something sweet, I usually resort to CHOCOLATE. Obvious answer, right? Lately, though, I haven’t been able to get enough fruit. I’ve put berries in all the things, which is totally unlike me. Must be the summer-like weather faking me out! I’m definitely not complaining because these blueberry muffins totally hit the spot and dare I say they even rival my favorite chocolate chip muffin? So tasty and you can’t even tell they’re grain free or refined sugar free.
If you thought there was nothing better on Earth than butter, you’re partially right and we can still be friends, BUT you’re also sooo wrong. Brown butter is like a gift from the gods and once you discover the aroma while it’s browning, the incredible nutty undertones that it contributes to your baked goods, and how it adds a depth of flavor that is purely indescribable, I guarantee that you’ll have a hard time going back to just regular ol’ room temperature unsalted butter. There are few things better on this Earth than butter, but brown butter has the poor guy beat without a doubt.
Woah. Hold up. A dessert with vegetables in it?! Just to reassure you, this dessert, while chock full of zucchini does, in fact, contain sugar and eggs and flour too. Whew, okay. We can all breathe now. Although there is no butter in this recipe, trust me if you can! And the applesauce? Don’t freak. It takes place of the majority of oil and offers the same rich taste and texture.
