Caramel Coffee Ice Cream Pie

Guys. Remember when I told you how ice cream was becoming my newest addiction? I can now confirm that this sweet obsession of mine is here to stay. It’s a definite can’t stop won’t stop situation and to be honest, I’m completely okay with that. Here’s to hoping you all are too!

We’re gettin dirty, prepare yourself. Oreo crust, coffee ice cream, salted caramel ice cream, and extra caramel on top for good measure. It’s like everything you’ve ever wanted from ice cream but in pie form. I’m OBSESSED… and may have  definitely ate half this darn thing by myself.

Coffee Caramel Ice Cream Pie

for the crust:

about 25 oreo cookies

1/3 cup melted butter

If this isn’t easy, I don’t know what is. Put your oreo cookies in a food processor or blender and begin to pulse. Slowly stream in melted butter, continue to pulse until you have a very fine crumb and bam. Oreo crust. Press this mixture into a standard pie dish, or springform pan, and freeze until you’re ready for the filling.

 

for the filling:

1 quart, or 2 pints coffee ice cream

1 quart, or 2 pints salted caramel ice cream

extra caramel for drizzling

To be honest, I used a store bought salted caramel sauce and mixed it into vanilla ice cream simply because that’s what we had on hand. I whipped up a batch of homemade coffee ice cream the night before, but feel free to use store bought, or be adventurous and make your own! Either way, let the ice creams soften up a bit at room temperature for about 10 minutes. Layer coffee ice cream into bottom of prepared oreo crust and layer the salted caramel ice cream on top of that. Pop it back in the freezer for about 2 hours before serving. Drizzle with extra caramel sauce and dig in!
