Gorgonzola & Pear Galette

Sometimes I like to be fancy. The days of putting on my prettiest princess dress with layers upon layers of fake pearls and sitting down with my company, usually stuffed animals and a parent I’d dragged along, for an afternoon tea, (apple juice) were without a doubt the best. We’d sip our juice, nibble on finger sandwiches, and discuss very important, thought provoking topics like where my queen of hearts doll’s crown had disappeared to and if I should choose sparkly nail polish over hot pink. Fast forward 15 years and not much has changed. I still love to have parties and still love to dress up and still love to have fancy party food. This gorgonzola and pear galette is one of them, and trust me, bite sized peanut butter and jelly sandwiches don’t even come close to competing.

Homemade Nutella & Peanut Butter Brownies

I’d like to say I’m lying. I’d like to tell you that it just happened, that it was completely unintentional, and that dipping pretzels in Nutella should totally count as dinner. But the truth is that I’m not lying, it was completely intentional, and yes, as a college student, sometimes my dinner consisted of Nutella and pretzels simply out of my laziness to muster up the energy, walk outside in the bitter, cold, Rhode Island weather, and hop on a shuttle to the dining hall. Now that I’m back home in warm and sunny Southern California, I no longer have an excuse to have dessert for dinner, and that dessert should be just that, dessert. Darn.

Pesto Pizza with Fontina, Caramelized Onions, Arugula, & Truffle Oil

Thursdays have perhaps become my favorite day of the week. Not because it’s one day before Friday, which means the weekend is fast approaching. Not because it’s when a new episode of Parenthood airs (which is pretty great though, let’s be real). But because Thursday afternoon is when our towns mall parking lot transforms into a sea of pop-up canopies filled with local farm vendors offering a wide variety of fresh produce. They have any and everything from juicy strawberries to funky romanesco broccoli. What caught my eye this week, though, was peppery arugula and creamy fontina cheese.

Backyard Snacks

In my backyard there’s a garden filled with flowers, citrus trees, tons of herbs, different vegetables, and beets. Lots and lots of beets. So when it came time to whip up an afternoon snack, I felt like there was no other choice. I’ve never been a huge beet fan, simply because their natural, bright red, yet gorgeous, dye has no remorse and will try to ruin every piece of clothing you have on. But sometimes you just gotta go for it, and I’m SO glad I did. Not knowing what to expect, I was pleasantly surprised when these shriveled up red jewels came out of the oven. Simple, crunchy, and delicious is what these chips are all about. Making them into chips really transforms the flavor and texture and offers a lovely, healthy snack!

Gluten-Free Cocoa & Cinnamon Granola

First things first, I’d like to consider myself an avid contributor to the gluten-free granola world. I know what you may be thinking, “Ohhh no not another one of those gluten free people.” But for real, eating gluten free isn’t an option for me. I was diagnosed with celiac disease about 3 years ago. That means no gluten whatsoever or you’re doomed to bed with a cramped tummy for the next 5 days. Take it from me, NOT fun.
